Disneyland Paris’ “Black Widow” Strawberries are a Sweet Treat

We are excited to see some recipes from Disneyland Paris show up on Disney Parks Blog this week. We enjoy trying new recipes that remind us of our favorite Disney treats and these are a great way to experience some from Disneyland Paris. The ‘Black Widow’ strawberries are delicious and sweet perfect for an evening snack.

INGREDIENTS:  

  • 1 kg strawberry puree
  • I g vanilla powder
  • 10 g yellow pectin
  • 80 g icing sugar
  • 6 g agar-agar
  • 40 ml water

Vanilla whipped cream

  • 1 litre single cream
  • I g vanilla powder
  • 90 g icing sugar

Marinated strawberries (for 8 portions)

  • 1 kg strawberries
  • 1/2 litre fresh orange juice
  • I g vanilla powder
  • 40-60 g icing sugar (depending on the amount of strawberries)

Caramelized puff pastry (for around 20 portions)

  • 1 Puff pastry
  • 50g caster sugar
  • 50g icing sugar

Steps:

STEP 1“Black Widow” strawberry pâte de fruits (fruit paste)

Mix the sugar with the pectin then set aside. Dilute the agar-agar in water then set aside. Put the strawberry puree in a round cooking pot, adding the vanilla powder, the sugar/pectin mixture and the agar-agar/water mixture. Mix well. Bring to a boil, stirring frequently and cook for 5 minutes over a low heat (85°C/185°F). Remove from heat and let stand for 10 minutes. Cover the bottom of a tray in cling film, then pour the strawberry puree up to a height of 0.5 cm. Allow to cool.

Mould into the shape of the “Black Widow” 

Set aside.

STEP 2 – Vanilla whipped cream

Whip the cream in the mixer bowl, then stiffen it with icing sugar and powdered vanilla. Pipe out using a piping bag with a size 18 (F8) fluted nozzle.

STEP 3 – Marinated strawberries (for 8 portions)

Wash and drain the strawberries. Hull them and cut into quarters. Before serving, put the strawberries in a bowl with the sugar, orange juice and vanilla. Mix well and let cool for 1 hour before serving.

STEP 4 Caramelized puff pastry (for around 20 portions)

Sprinkle the puff pastry with caster sugar, then place on baking paper and bake between two baking tray in the oven at 180°F for 18 minutes. Cut the puff pastry with the “Black Widow” stencil. Sprinkle with icing sugar and lightly caramelize using a blowtorch. Set aside.

STEP 5 – Plating

After a minute, place the strawberry paste on the “Black Widow” puff pastry. Set aside. Arrange the marinated strawberries in a deep dish (with its juice – 125 g). Draw the whipped cream up into a central dome. Then top with the “Black Widow” strawberry pâte de fruits puff pastry.
