‘AMA ‘AMA, Aulani’s Signature Dining Experience FINALLY Has a Reopening Date

Disney’s Hawaiian Hideaway, Aulani Resort and Spa has exciting news! Its Signature restaurant ‘AMA ‘AMAfinally has a reopening date! The resorts highly sought after fine dining restaurant has been closed since the beginning of the COVID pandemic although the closure hasn’t been a complete waste, the space was completely remodeled during that time and the restaurant will debut a new menu as well.

The newly redesigned interior features a sleek design that incorporates native island plants and a color scheme that blends seamlessly with its open air surroundings. Like other locations around the resort, ‘AMA ‘AMA takes great care to honor the island’s rich history and tradition. The name ‘AMA ‘AMA means The Mullet, one of the most abundant and important fish to the people of Hawaii.  Live music will fill the space and set the mood for an evening of fine dining, island style! 

Previously the restaurant served both breakfast and dinner but when it reopens on October 14, it will serve dinner only. The new menu will feature a four-course, prix fixe elevated meal. Like its interior, each course pays homage to the spirit of Hawaii. Unique flavors combine with high-quality ingredients and locally sourced fish and produce to create an unforgettable dining experience. The menu, created by Chef De Cuisine Nicholas Amoriello, is almost completely gluten-free, with a plant-based option available for every course to ensure every type of dietary need to include everyone in the immersive cultural experience.

Offerings include an array of contemporary island cuisine. Dishes like the “lox” opakapaka with greens, citrus, and raw and pickled vegetables; and the savory Pork Belly with “scanlan sauce,” onion, kiawe honey and Okinawan sweet potato will delight even the most discerning taste buds.

Don’t forget about dessert! Pastry Chef Carolyn Portuondo has prepared a decadent selection of desserts, incorporating iconic local flavors such as lilikoʻi, calamansi, coconut, mango, macadamia and Kona coffee.  

This is one Disney dining experience you won’t want to miss!
