Forget Cookies, Gideon’s Is Opening a Whole New Concept at Disney Springs This Summer!
Gideon’s Bakehouse changed Disney Springs. That is not an overstatement. When it opened in December 2020, it brought something to the shopping and dining district that had not really existed there before: a local concept with a genuine following, a product worth waiting in a long line for, and a reputation that spread entirely by word of mouth among people who had actually been there. Five years later, the founder is doing it again.
The new concept is called Six Ravens. It is opening at Disney Springs this summer. This week, Disney quietly added an official web page for it, and the menu details that showed up are worth paying attention to.
What Six Ravens Is
Six Ravens is a savory hand pie shop built around something called a Coffyn. The name comes directly from medieval Europe, where pastry cases were used to encase hearty fillings for long journeys. The Coffyn at Six Ravens is a house-made yeast roll fully stuffed with savory fillings, developed by Gideon’s Kitchen alongside collaborating Central Florida chefs. Disney describes the concept as a modern take on delicious medieval eats.
The name Six Ravens references the Tower of London and the legend of its resident ravens, said to guard the tower. The concept has a fully developed identity that goes well beyond a typical theme park snack stand, which should not be surprising given where it is coming from.
What the Menu Actually Says
The official Disney web page filled in details that had not been confirmed before. Potato-based sides will come with dipping sauces, specifically sweet heat and honey mustard. Desserts will be served as tarts. Root beer on tap will be available alongside local draft beers.
The beer program is where it gets especially interesting. Six Ravens is partnering with Sideward Brewing and The Ravenous Pig, two of the most respected names in the Orlando food and drink scene. Sideward has been a cornerstone of Central Florida craft beer for years. The Ravenous Pig has been one of Orlando’s most serious dining destinations for just as long. Having both of them built into a Disney Springs concept is not something that happens every day.
For visitors who want a taste of what Orlando’s local food culture actually looks like, Six Ravens is designing that in from the start.
How Close Is the Opening
The exterior of the Six Ravens storefront is nearly finished. The building sits in the former Art of Shaving space at Disney Springs, and the facade is now largely complete. Dark grey wood paneling, black scalloped awnings, large multi-pane windows, and deep red entrance doors give it a look that ties closely to Gideon’s Bakehouse nearby while standing on its own. Exterior signage has not yet been installed, which is typically one of the last steps before a Disney Springs location opens its doors.
Disney has confirmed a summer 2026 opening. No specific date or month has been announced. The addition of an official website with detailed menu information generally indicates things are moving in the right direction.
Why This Matters
This summer, Disney Springs will have two Gideon’s adjacent experiences running simultaneously. The original bakehouse, with its massive cookies and devoted following, and Six Ravens, a short walk away, with savory hand pies, smashed potatoes, tarts, and locally brewed beer. Founder Steve Lewis got his start at Disney Springs with a secret menu item at The Polite Pig before Gideon’s became what it became. Six Ravens is the next step in that story.
Based on the menu taking shape and the building nearly ready to open, the line is going to form quickly.
