Disney Brunch Lineup Just Got a Major New Addition in Orlando

Disney Springs already had a strong weekend brunch lineup before this week. Chef Art Smith’s Homecomin’s on Saturdays and Sundays from 9:30 a.m. Summer House on the Lake starting at 9 a.m. Wine Bar George Wine Country Brunch from 10:30 a.m, House of Blues from 10 a.m. to 2 p.m. The options were already genuinely good across different atmospheres and price points.

And then The Edison launched brunch.

The steampunk industrial venue that has been one of Disney Springs most visually distinctive restaurants since it opened is now serving weekend brunch every Saturday and Sunday from 11:30 a.m. to 3 p.m. Craft cocktails, live music, and the full Edison atmosphere are now available over bread pudding, French toast, and a bacon-garnished bourbon cocktail.

The Food Menu

Four items anchor the new Edison brunch menu, and each one reflects the kitchen’s approach to doing comfort food with a level of craft that justifies the setting.

The Early Bird combines buttermilk-fried chicken and a Belgian waffle with cherry pepper maple syrup, of sweet-and-savory combination that anchors a brunch menu. The French Toast takes the bread pudding approach, topped with berries and cream, elevating a standard menu item into something worth ordering specifically. The Big Ol Biscuit Sando stacks a house-made biscuit with sausage, bacon, eggs, and cheese in a format that works whether you are starting a full day at Disney Springs or settling into a leisurely weekend late morning. Sticky Monkey Bread brings apple-cinnamon brioche pull-apart with toffee caramel as the shareable sweet option that rounds out the menu.

The Cocktails

The cocktail program is where The Edison brunch distinguishes itself most clearly from the other Disney Springs brunch options.

The Piggyback Maple Old-Fashioned uses WhistlePig PiggyBack bourbon, maple syrup, and pecan liqueur, with a bacon garnish. It is the kind of brunch cocktail that makes a menu memorable rather than functional, and the kind of drink that people will order specifically because The Edison is the place serving it. The Bloody Mary uses Grey Goose vodka, bacon, a blue cheese olive, and gem lettuce. Mimosas are available with orange, pineapple, grapefruit, or watermelon juice for guests who want the classic brunch beverage in a slightly more interesting format than the standard single-option pour.

Why This Matters for Disney Springs Weekends

The Edison’s brunch launch adds something to the Disney Springs weekend morning that wasn’t there before. The venue’s combination of steampunk industrial design, live entertainment, and serious cocktail credentials creates a brunch atmosphere that is genuinely different from any other option currently available in the district. Homecomin is Southern comfort. Summer House is in coastal California. Wine Bar George is elevated and wine-forward. House of Blues is bold and lively.

The Edison is none of those things, and that is exactly the point. Saturday and Sunday. 11:30 a.m. to 3 p.m. Reservations are highly encouraged.
