Gideon’s Bakehouse Drops Hint About Huge Disney Springs News Coming Tomorrow

If you follow Gideon’s Bakehouse on social media, you probably saw their latest post and immediately started speculating. The popular Disney Springs bakery has announced that it’ll be sharing big news this Friday, and based on what we’ve been seeing around the shopping district, it’s likely to be about its expansion plans.

What We’ve Noticed at Disney Springs

Anyone who’s walked through Disney Springs lately has probably spotted the changes happening near the current Gideon’s Bakehouse location. The old Art of Shaving storefront, which sits just a few doors down from the bakery, has been covered with new window graphics. The artwork features red designs with ravens, crowns, and swords, along with a message that reads “Pardon Our Appearance. Something New is Coming Soon.”

The aesthetic definitely feels connected to Gideon’s gothic, dark branding, but the raven imagery is something different. It’s not the standard Gideon’s logo we’re all familiar with, which has people wondering if this means we’re getting something beyond just another cookie counter.

The Paperwork Confirms This Disney Springs Change

A Notice of Commencement was filed last month that basically confirms Gideon’s involvement. The document shows The First Raven LLC as the client for a new tenant build-out at Disney Springs. If you dig into public records, you’ll find that Steve Lewis, who founded Gideon’s Bakehouse, runs that company. So yeah, this is definitely a Gideon’s project.

The permit calls for work at the former Art of Shaving space, and Walt Disney World is listed as the property owner. All the pieces fit together pretty clearly.

Why This Matters For Disney Springs

Let’s talk about why Gideon’s would need to expand in the first place. Since opening at Disney Springs in January 2021, the bakery has been absolutely slammed with customers. The cookies are massive, nearly half a pound each, and they’re made from scratch in small batches. The flavors rotate monthly, and there are seasonal offerings that have people planning their Disney Springs trips specifically around cookie releases.

The problem is that demand has consistently outpaced the current location’s capacity. On busy days, Gideon’s uses a virtual queue system where guests join through their phones and wait to be called back. Even with that system, the line inside the store can get pretty intense. Some guests have described the entire Gideon’s experience as “outrageous” due to the high level of crowding.

Opening a second location makes total sense from a business standpoint. The question is what kind of location it will be.

What Could Friday’s Announcement Be?

There are a few theories floating around. The most straightforward option is that this will simply be a second Gideon’s Bakehouse selling the same cookies. That would help with capacity and give guests more options for getting their cookie fix without dealing with crazy waits.

But the different branding on those window graphics suggests something else might be happening. Some people think it could be a coffee shop concept that also sells Gideon’s cookies and other baked goods. Others are hoping for a grab-and-go style location where you can pick up cookies without joining the main bakery’s queue.

There’s also speculation about expanded menu options. Right now, Gideon’s focuses heavily on cookies with some seasonal cakes thrown in. A second location could potentially offer pastries, coffee drinks, and other items that complement the cookies without competing directly with the main bakery.

A Quick Gideon’s History Lesson

For context, Gideon’s didn’t start as a Disney Springs powerhouse. Steve Lewis launched the bakery in late 2016 at Orlando’s East End Market with just one employee and an $800 budget. The nearly half-pound cookies made in small batches caught on quickly, and lines started forming.

When the Disney Springs location opened in December 2020, it brought Gideon’s to a much wider audience. The bakery has remained one of the busiest food spots in the entire shopping and dining district ever since.

Mark Your Calendar

Whatever Gideon’s announces on Friday, it’s going to be significant. They’ve built too much anticipation for this to be a minor update. Whether it’s a second bakery, a new concept, or something nobody’s predicted yet, the news will likely impact how guests experience Disney Springs going forward.

Check back Friday to see what they reveal. Based on how they’re teasing this, it should be worth the wait.
